Today, I have a citrus grilled chicken recipe for you!

I chose this recipe because of its easy-to-find ingredients as well as the fact that the weather is getting quite nice here, and it’s definitely time to pull out the grill! But don’t worry, if you don’t have a grill, you can do this in a pan as well. Give it a try!

How To Serve This Grilled Citrus Chicken

  • A side of rice.
  • A side of veggies.
  • Inside a sandwich with whole grain bread.
  • Shred and put inside of tacos or burritos.

This is wonderful off the barbecue with some potato salad and some corn salad (without the feta). That’s how I served it, and everyone loved it! In fact, almost everybody went back for seconds. Not too shabby for a group of folks that sort of looked down their nose at eating clean!

About The Ingredients

Orange

Lime

Extra virgin olive oil – Or possibly a higher smoke point oil such as almond oil or coconut oil.

Garlic– Pressed or minced.

Boneless skinless chicken breasts

Salt

Black pepper

How To Make Citrus Grilled Chicken

Zest the orange and lime directly into a large bowl, and squeeze the juice from the orange into the same bowl.

Add the oil, garlic, and chicken to the bowl, ensuring that everything is well coated. Toss well to fully coat the chicken in the sauce.

Cover the bowl and place it in the refrigerator for at least 30 minutes but no more than 2 hours.

Meanwhile, prepare your grill or grill pan by heating it to medium-high heat.

Once the chicken has marinated, remove it from the bowl and sprinkle it with salt and pepper.

Place the chicken on the grill or grill pan, and cook for approximately 6 minutes on each side or until the chicken is fully cooked. If you prefer a hint of lime flavor on your chicken, you can squeeze the remaining lime juice over the chicken while it’s cooking. This step is optional but adds a delicious twist!

It’s worth noting that if your bowl isn’t wide enough to allow the chicken to marinate evenly, you can use a large Ziplock bag instead. Simply transfer everything from the bowl into the bag and let it sit in the bag. This ensures that the marinade reaches every part of the chicken.

Storage

Store leftovers in an airtight container and keep them in the fridge for up to 3 days.

Freezing

This will freeze well if wrapped up well. It will keep in the fridge for up to 4 months.

Reheating

If frozen, thaw fully in the fridge for at least 24 hours. From the fridge, simply reheat in a microwave or in a skillet on your stovetop.
