A waffle is a golden, embossed, grid-like pancake that is crunchy on the outside but soft and fluffy on the inside. Thanks to their neutral flavour, they are also very versatile as you can pair them with sweet or even salty ingredients.

Although preparing waffles is as easy as preparing pancakes or pancakes, its way of cooking can complicate things a bit, since it requires a special instrument: a waffle maker. But don't worry if you don't have one, as you can use other utensils and get very good results (some better than others, of course).

Add all the dry ingredients to a bowl, except for the baking soda. Remember, bicarbonate is activated by contact with acidic ingredients, so add it last, close to cooking time, so it doesn't lose effectiveness.

If you want, in this step you can also add a pinch of ground cinnamon as an optional ingredient. As you add the ingredients, sift them through. Sifting the dry ingredients prevents lumps from forming in the preparation. Mix everything very well so that the ingredients are integrated.

Add all the liquid ingredients to another bowl. It is very important to mix all the ingredients well when making the waffle dough without a waffle iron. The consistency should not be too runny nor too thick, but it should be a little thicker than a pancake batter.

Add the liquid ingredients to the dry ones. Stir well until all the ingredients are integrated and get a hom*ogeneous texture. Add the baking soda too.

Let the dough rest for 5 minutes. Just as it isn't best to use old batter, it is also not recommended to add the batter to the griddle pan right after we've mixed it thoroughly. Let it rest for a couple of minutes so you can have fluffier waffles.

Grease the sandwich maker with butter or oil if necessary. Since we're not using a waffle iron, you can opt for a sandwich maker or a griddle pan. If the appliance is non-stick, it is not necessary to grease it with oil or butter. Run the sandwich maker or heat the griddle pan for a couple of minutes before cooking the waffles. It's important to heat it up before starting so the waffles are cooked thoroughly.

Ladle the mixture onto the griddle. Add the mixture evenly, otherwise the waffle will have an uneven structure.

Wait until it cooks. The estimated time is between 5-8 minutes. However, it varies according to the heat generated by the iron of the appliance. With this in mind, we recommend doing several initial tests, cooking at least 1-3 test waffles. Thus, you will know an exact cooking time and you can apply it with the rest of the batter.

Once you see that your waffles are ready, leave them a little more. This way, they will be crispier on the outside. But, be careful! Do not leave them for too long as they can burn.
