Today’s recipe is for the soup made famous on Seinfeld.

You remember…”No Soup for YOU!”

On the popular episode, everyone is crazy for the soup of the so-called, “Soup Nazi.” People are lining up for half a block just to get a cup of his soup. Each time Jerry, George, Kramer or Elaine take a bite they almost faint with spasms of delight.

Like much else on the show, this was based on a real part of Jerry’s life in New York City.

There actually is a Soup Man and he runs a tiny soup restaurant in NYC that has customers lining up everyday for cups of soup, even in sub-zero winters.

The creator is named Al and he goes by the title “The Soup Man.”

Ingredients

  • 1 quart Chicken Broth
  • 1 quart Water
  • 1 Potato peeled and cubed
  • 1 Carrot sliced
  • 1 stalk Celery sliced
  • 1/3 cup frozen or canned Corn Kernels
  • 1/3 cup Cashews
  • 1/3 cup shelled Pistachios
  • 1 Parsnip peeled and sliced
  • 1/3 Eggplant peeled and cubed
  • 1/2 White Onion diced
  • 2 cloves Garlic minced
  • 1/4 cup Lemon Juice
  • 1 roasted Red Pepper chopped
  • Freshly ground Black Pepper
  • 1 teaspoon Curry Powder to taste
  • 1/2 teaspoon Marjoram
  • 1/8 teaspoon Nutmeg
  • 1/2 teaspoon Thyme
  • 1 Bay Leaf
  • Parsley chopped, for serving

Instructions

  • Put all ingredients, except parsley, into a large pot.

  • Bring to a boil then turn down the heat and let simmer, uncovered, for 3 - 4 hours. Add water if necessary. Stir often and let reduce to about the consistency of chili.

  • Sprinkle with parsley to serve.

This is a traditional Indian soup. There is no one correct way to make it so it is very versatile. Add whatever ingredients suit you. Check the internet for ideas.
